Pork Roast with Butternut Squash, Apples and Sage
Anyone for a dinner of caramelized pork loin? Yeah, we thought so. While the dish has a slight sweetness to it and is filled with tastes of warm spices, it is free of sweeteners and completely clean. We first marinade the pork in apple cider, sage, cinnamon, date-paste, and Italian herbs. After browning it nicely and cooking throughout we serve it with roasted apples, butternut squash and sweet potato puree, and wilted spinach. A side of apple-cider & sage gastrique brings some zest to the warm winter flavors of the dish.
