Roasted Peach, Feta & Farro Salad
Not all peach salads are summer-y. This dish is light and tangy, but hearty enough for the cold winter days. Sweet and tangy peaches have been marinated in balsamic vinegar until they are tender. While they are worthy of praise alone, they are even better paired with feta cheese (everyone loves some soft feta cheese with marinated fruit, right?) and a hearty, healthy grain favorite of ours: farro. All of this goodness is served on a bed of hearty greens. Served with our rich and delicious balsamic vinaigrette.
PS. Do you notice that our salads are served... upside down? Yes, we know! This helps insure that the greens stay light and crispy. It's like packing a grocery bag, kale and lettuce shouldn't go on the bottom. A few ideas: you can either poor on dressing, put the lid on, shake the box like crazy, and chow down on a nicely tossed salad OR you can go ahead and flip that salad right side up into a bowl or onto a plate, and top if off with the included dressing.
