We start this dish with a base of sauteed onions, anaheim peppers, and tomatillos, which impart a lighter, more tart flavor than heavier tomato and red chili versions. We keep things light by using white beans, but bump up the flavor with traditional spices like cumin and Mexican oregano. Sour cream gets folded in at the end along with a squeeze of lime juice for a fresh kick of citrus.
