Spain has a rich tradition of seafood dishes. While paella is popular on the Mediterranean coast, the northern province of Asturias is known for two things: its seasonal salmon runs and abundance of apples (kinda like Washington!). For this dish, we lightly season a salmon fillet with garlic and pimentón (Spanish smoked paprika), and grill it over low heat so the flesh maintains its natural moisture and richness. To keep the theme going, we pair it with other Spanish touches such as grilled asparagus, smoky olive-oil infused mashed potatoes, and a green pepper romesco.
