The classic Mayan recipe of "cochinita pibil" requires placing a marinated, whole pig over an open-pit fire, covering with banana leaves, and letting it smolder for an entire day. Our version is much simpler than that, but still features falling-off-the-bone tender pork that's marinated in achiote, chili, and other spices. This juicy, flavorful concoction gets stuffed into green chili infused corn tortillas and topped with pickled onion, yellow chilis, and cilantro. The traditional sides of seasoned rice and black beans make an appearance, as does the ubiquitous Yucatan condiment of habanero salsa.
